After reviewing the website it seems FLUENT will run on Linux or WIN-NT or WIN2K.With Unix you will get better performance via the OS because UNIX crunches data much more efficient but you will have to have a graphics terminal (X11) and setting up X11 can be a bitch sometimes and you might not get the graphics results you require but its doable.
Windows solution might be the way to go. I ran some data warehouses on win2k and it did very well. The hardware was IBM Netfinity servers with 4way cpus and 4GB RAM 300+GB of disk space (RAID5). For this app you might get away with a 2way Pentium4 cpus with 2-3GB RAM and smaller disk (depends on how big the data sets are) but I would consider RAID5. We paid for the 4way CPU and 4gbRAM systems around 25k maybe alittle more. You won't need this much horsepower so cut it in half. Keep in mind most computer vendors are looking to make deals lately so play tough with them.
Think multi CPU's and lots of RAM for your solution and RAID5 disk solution provides fault tolerant environment and faster disk read/writes make sure the RAID5 disk controller has at least 128mb disk cache
